Easy One Dish Breakfast

Ok, so I am confessing I have never made a breakfast casserole. Not sure why. Anytime I have been to a potluck breakfast I have tried it -made by someone else and it is always so good. Last weekend my son was with some friends at a lock-in over night and the next morning they had breakfast. My son mentioned having this mysterious breakfast dish that you had to scoop out of a dish. I knew immediately what he was talking about. He asked me if I could make it sometime. So I did.

I love the internet. I just went to Google and typed in "breakfast casserole" and found an simple recipe. I didn't even print it out. I made it smaller serving size than the recipe called for since it is just my kids and I.

Basically the bottom layer is is 4 pieces of whole wheat bread torn into pieces. My daughter, Ashton, helped me put it all together. I browned 1 small package of low fat sausage and added 1/4 cup diced onions when cooking the sausage. Nothing to drain with the sausage since it was so lean. I spread the sausage over the bread layer. Then added a layer of grated cheddar cheese. Last I beat 6 eggs and 1 cup milk and a dash of salt and pepper and poured that over the top. I baked it at 350° for 45 minutes.

I will confess this picture is not quite right. I took it out, took this picture and served a piece only to find that it needed to bake a little longer. I put it back in the oven for another 10 minutes. I The cheddar cheese browned really nicely on top and it was more firm. So definitely back for 55-60 minutes.

My in-laws are big breakfast people and I always make this for breakfast when they are visiting. I put the whole thing together the night before and cover it with plastic wrap and put it in the fridge. In the morning you just bake it off and it is less runny this way. The egg soaks into the bread overnight and it puffs as it bakes. . . almost like a savory french toast with meat and cheese topping.

I've been making this recipe for years for special occasions. The first time I made it was while staying at my mother-in-laws. She was out of sliced bread but had some fresh sour dough bread she'd made. I made the substitution and it was delicious! Our family prefers it with the sour dough.
